October is my favorite month and pumpkins are my favorite fall vegetable whether I'm using them in pumpkin pie, muffins, smoothies...or soup. When the days get chillier, we all turn to comfort foods to warm our insides and make us feel cozy. This is especially heart-warming during the fall since it captures the imagination of kids and their love of Halloween. It makes me happy as a parent since it's a complete meal with the ground turkey. Ingredients
  • 2 T coconut oil
  • 1/2 cup finely chopped onion
  • 1/2 T cumin
  • 1/2 tsp garam masala
  • 2 cloves garlic, minced
  • 1 can pumpkin puree
  • 2 cups chicken bone broth or water
  • 1 can full fat coconut milk or hemp milk
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 lb ground organic turkey
  • 1 scallion
Directions
  • Step 1 Heat a large pot to medium then add coconut oil
  • Step 2 Saute onions until translucent (about 5 minutes)
  • Step 3 Add spices
  • Step 4 Add garlic and saute for 1 more minute
  • Step 5 Remove momentarily from the pot and put in a small bowl while you cook the turkey
  • Step 6 Cook turkey about 8 minutes stirring frequently then add onion and garlic back in
  • Step 7 Add puree, liquid ingredients and the salt and pepper. Mix.
  • Step 8 Simmer on medium low for 20 minutes
  • Step 9 Garnish with cut scallion
  • Step 10 Serve with love and enjoy!
