Banana Spice Paleo Pancakes

My usual morning fare, a smoothie, is pretty much as exciting as I am in the morning.  I’ve got my favorite well-researched, nutrient-packed, sometimes-chalky, vegan protein blend that’s oh so excitingly paired with a greens blend.  Yes, every cell in my body loves me in the morning but it’s doing nothing to create a ra ra dance in my imagination.  As my husband is fond of saying, “it is what it is”, and what it is…is healthy yet bland.  So today I needed to shake things up.  It’s a day after my birthday and I want this year to be STELLAR…starting with a top-notch nutritional yet exciting breakfast.   Enter my Banana Spice Paleo Pancakes.  Make sure you add cardamon to complement their lovely taste and scent.  It’s slightly unusual in pancakes but pairs so well with the banana.  Here goes…And in case you need a visual guide here’s a video…

You're following paleo and proud of yourself. As you should be. It's one fabulously healthy way to eat. But sometimes you'd really like something from the old days...you know, when pancakes and waffles and muffins and breads and pastas were considered okay. Well, try these tasty little spicy pancakes and you'll never ever feel like you're missing out again. These low carb pancakes are completely satisfying and blood-sugar balancing so treat yourself!

Ingredients
  • WET INGREDIENTS
  • 2 T almond milk
  • 2 eggs, room temperature
  • 2 T coconut oil
  • 1/2 tsp vanilla extract
  • 1/2 T lemon juice
  • 1 T coconut syrup
  • 1/2 banana
  • *
  • DRY INGREDIENTS
  • 1/2 cup almond meal
  • 2 T coconut flour
  • 1/4 tsp baking soda
  • 1/8 tsp sea salt
  • 1/4 tsp cinnamon
  • 1/8 tsp cardamon
  • *
  • 1 T coconut oil for cooking
Directions
  • Step 1 In a blender, add all wet ingredients followed by dry ingredients
  • Step 2 Blend for about 1 minute on high speed
  • Step 3 Heat a skillet to medium then add the coconut oil
  • Step 4 Scoop a heaping tablespoon of batter on spoon and dollop in skillet and flatten a bit (you will probably be able to fit 5 dollops per set)
  • Step 5 Cook for 3 minutes each side.
  • Step 6 Continue until all batter is done. Serve with love and enjoy!
